The Salad Project, one of London’s fastest‑growing healthy food‑to‑go brands, is opening a new store at London Bridge station on Thursday 28 May, marking its first move into travel retail.
The 1,410 sq ft unit sits on Tooley Street beside Wasabi and Starbucks, giving the brand direct access to a high‑volume flow of commuters, local workers and visitors. The site will offer The Salad Project’s full range of fresh, fully customisable salads and bowls, prepared in an open kitchen with an efficient service line and a dedicated Click & Collect area to support speed and convenience.
For customers staying longer, the restaurant includes 14 dine‑in seats, echoing the brand’s successful Tottenham Court Road design. To drive early footfall and loyalty, the brand is launching with a week of promotions, with free cookies for the first 150 customers on Thursday and Friday.
To drive early footfall and loyalty, the brand is launching with a week of promotions, plus double points for SPAPP+ members. Additional opening offers will be shared via email, the SPAPP+ app and social channels.

Since launching in Spitalfields in 2021, The Salad Project has grown to fifteen London stores, building a strong following through high‑quality ingredients, bold flavours and operational consistency—key strengths that translate well into high‑footfall, quick‑turnover environments like London Bridge.
This opening follows other recent additions to the station’s retail mix, including Popeyes and Hobbs London.
Fiona Thomson, Category Manager, Network Rail, comments: “The Salad Project has been a brand on our wish list for some time now and their rapid roll out across London shows the demand for a new kind of healthy fast food. We’re committed to giving customers what they want in our stations. With The Salad Project, we’re delivering on that commitment, bringing something that balances wellness and nutrition with bold flavours and global influences. The Salad Project is going to be a huge success, and we hope it will be one of many to open across our estate.”
Florian de Chezelles, co founder of The Salad Project, adds: “London Bridge Station has been a personal target since day one. It’s not just a major transport hub; it’s an iconic London location, and being part of it is a huge milestone for us. The Salad Project is on a mission to bring healthy fast food to the UK, and working with Network Rail is a key step in reaching that goal”

“We’re only at the start of our journey, but we have big plans for growth. What has made The Salad Project so popular is our commitment to excellence in food, store design, and service quality, a secret recipe that has allowed us to build an incredibly loyal customer base. We are fully committed to delivering that same high standard at London Bridge, ensuring that commuters and travellers can experience fresh, healthy, and delicious food, served with speed and care”
